Last night I organized my kitchen cabinets (procrastination on midterm studying, obviously), and found a ton of random stuff I hadn’t used in awhile or had forgotten about- ground flax, Vega smoothie packets, Amazing Grass, xanthan gum. I figured I’d use some of it up this morning, hoping it would taste okay but ready to add tons of cocoa powder and sweetener if it didn’t.

Surprises abound- this might have been one of the best smoothies I’ve ever had. Into the blender went:

  • 1 bottle Zico coconut water (been in my fridge for ages)
  • 1 large banana
  • 1 scoop Amazing Grass powder
  • 1 packet natural flavor Vega Whole Foods Health Optimizer
  • spoonful of ground flax meal
  • about 1/2 cup frozen blueberries (dug out of the freezer)
  • drizzle of honey
  • tiny spoonful xanthan gum
I expected the Amazing Grass + Vega to make things kind of gross, but I guess the fruit, honey and coconut water were enough to cover it up, because this weirdly tasted like mostly blueberry. Huh. Sometimes you just get lucky. Plus, it made two big glasses!
It was good fuel after my workout- just 40 easy minutes on the elliptical. I must admit that I’ve been seriously lacking in the effort department when it comes to exercise lately…I feel like all my concentration and hard goes to school, and at the gym I just want to zone out and listen to music or watch TV. Maybe my workout mojo is hiding out with my blog mojo.
Hopefully this makes good brain food- midterm today! Happy Friday :)
