Last night I organized my kitchen cabinets (procrastination on midterm studying, obviously), and found a ton of random stuff I hadn’t used in awhile or had forgotten about- ground flax, Vega smoothie packets, Amazing Grass, xanthan gum. I figured I’d use some of it up this morning, hoping it would taste okay but ready to add tons of cocoa powder and sweetener if it didn’t.
Surprises abound- this might have been one of the best smoothies I’ve ever had. Into the blender went:
- 1 bottle Zico coconut water (been in my fridge for ages)
- 1 large banana
- 1 scoop Amazing Grass powder
- 1 packet natural flavor Vega Whole Foods Health Optimizer
- spoonful of ground flax meal
- about 1/2 cup frozen blueberries (dug out of the freezer)
- drizzle of honey
- tiny spoonful xanthan gum

I made a smoothie yesterday that surprised me too. Spinach + prunes + banana. Sounds disgusting. Actually turned out good
That looks absolutely amazing! I love adding blueberries to my smoothies, they taste brilliant. I recently made a smoothie with frozen mixed berries, berry yogurt, spinach and almond milk. Pretty typical combination, but it tasted extra-good.
Now I want a smoothie, too!
I made a sandwich with cream cheese and deli meat (turkey) and it tasted pretty good
Mmm…I just had roasted broccoli, roasted red pepper hummus, and goat cheese, topped with sunflower seeds and LOTS of cayenne pepper for lunch. Random, but delicious!

Just like you’ve lost your blogging/exercise mojo, I think I’ve lost my cooking mojo. I haven’t made anything remotely interesting this week!
Pecan Butter! Definitely did not expect it to be as good as it was!
I made some spicy black beans this week and normally I always prefer desserts/sweets but for a savory dish, it was tasty.

Greek yogurt cereal bowl! Some added cocoa powder and cereal goes a long way, even though I normally do not like greek yogurt at all
Oh my goodness, school takes SO much out of you. If you think about it, we are being relatively active ALL day! Plus, under all that polyester we (or at least I do) get pretty sweaty!

I love surprisingly good things like this! I made a good accidental smoothie yesterday too - blueberries and peanut butter were involved and it was delicious. Enjoy your Saturday - hope you get to relax!
