In case you didn’t already know, it’s Valentine’s Day!
I’m really not a huge fan of this holiday. It’s a nice idea, but in execution I think it’s kind of silly. I’m not single and bitter about it, either; even when I’ve had a boyfriend, all the hoopla just kind of sets you up for disappointment. Valentine’s is kind of like New Year’s- it’s never as good as you think it will be.
That said, there is one quality that redeems the holiday: chocolate. It’s everywhere this time of year. Over the weekend, I decided to make a simple little Valentine’s Day treat to bring into work with me, just to celebrate my favorite food!
S’Mores Cups
Yields 20-24 mini cups
Ingredients:
- 12 ounce package dark chocolate chips (I used Hershey’s special dark)
- 1 cup mini marshmallows
- 3 sheets graham crackers
- 1/2 tablespoon butter, melted
- Line 24 mini muffin tins with paper liners. Crumble graham crackers into a bowl and stir in the butter, then sprinkle the pieces evenly into the tins.
- In a microwave-safe bowl on medium heat, melt the chocolate chips a minute at a time, stirring frequently until all the chips are melted. Working quickly, spoon the melted chocolate evenly into each of the muffin cups.
- Top each cup with a few mini marshmallows. If desired, you can use a lighter to slightly burn the tops of the marshmallows.
- Allow to set in the freezer for at least 20 minutes. Store at room temperature in an airtight container.
These aren’t particularly fancy or involved, and I’m pretty sure I’m not the first person to come up with the idea for them. However, they are good- there’s just something about the chocolate/graham/marshmallow combination that’s absolutely classic. The mini size makes them perfect for a little treat, or something sweet with your Valentine’s lunch!
Hope your day is filled with lots of love
Edited to add: I forgot to announce the winner of my Valentine’s giveaway! And the winner is…

What’s your favorite Valentine’s candy? Are you eating any chocolate to celebrate the holiday?
My favorite v-day candy has to be a good bar of dark chocolate. There’s nothing like it!
I’m with you- not the biggest fan, it just sets one up for disappointment. Maybe someday I’ll be a believer, even as a married woman I’m not fan…. I do like the excuse to eat chocolate though!
These look amazing! Just pinned the recipe for the future
Exactly like New Year’s, you’re right!
The Cupcakes look great. Thanks for following me on Twitter btw
made me happy…
Love this idea! So cute!
These are so cute and look delicious!
I love Reese’s peanut butter cups. Those are my favorites. Chocolate and peanut butter, how can you go wrong with that?
That’s so true about New Year’s - it’s never as good as I hope it will be! And as for Valentine’s Day… I’m single and I always have exams around this time, so it barely crosses my mind.
These look really good though!
Sadly I am sick so I doubt there will be much celebrating with chocolate.
How cute are these? And only 4 ingredients? SCORE! Happy V-day Gabriela!
I love this little one-handed smore delivery system…happy valentine’s day!
I love recipes like this! So simple, but then so freaking delicious!! I’m staying in tonight (no man candy here, sadly) but I do have some grand plans involving left over truffles and the FOX show line-up. Oh yeah.
I’m a huge fan of DIY cups and have pretty much stuffed a jillion things into them over the years but never actually marshmallows into a cup. Thanks for making me hungry for marshmallows and chocolate at 830am
Happy Valentine’s Day!
My boyfriend picked me up a heart shaped chocolate frosted doughnut to start the holiday off right with chocolate.
Those look DELICIOUS. You’re so right, chocolate is the best part of Valentine’s. I’m right there with you about the holiday. Whether or not I’ve had a boyfriend on February 14, I’ve always thought the whole thing was silly…I feel like it diminishes the really wonderful holidays, like Thanksgiving and Christmas. Pink hearts and greeting cards pale in comparison.
These look amazing! I love salted dark chocolate and anything with peanut butter!
I love giant reese’s peanut butter hearts! The more pb the better!
These are SO cute!
My favorite Valentines Day candy (this year) is the Pomegranate Dark Chocolate Bar that one of my friends gave me. The flavor is sensational!
These are so creative! Not to mention adorable.
