Whenever it comes up in conversation that I went to cooking school, people always ask what my favorite thing I learned to make is. That’s a tough one- it depends on the kind of food and whether health is a factor- but these cookie bars are always at the top of my list.
I was assigned this recipe on cookie day, and the finished product was a hit with everyone. They’re gooey and rich, but not cloyingly sweet, and the combination of chocolate chips, dried cherries and chopped pecans really gives them a hearty crunch and satisfying texture. Once again, I changed some ingredients and techniques to make them easier to create!
Chocolate Cherry Pecan Squares
Adapted from the Natural Gourmet Institute
Yields 16 squares
Ingredients:
- For the crust:
- 1/2 cup room temperature unsalted butter
- 3/4 cup white sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- For the topping:
- 1 cup white sugar
- 1/4 cup all-purpose flour
- 1/8 teaspoon sea salt
- 2 teaspoons vanilla extract
- 2 eggs
- 1 cup roughly chopped pecans
- 1 cup dried cherries
- 1 cup chocolate chips
- Preheat the oven to 350*F. Generously grease a 9×9″ pan.
- Using a stand or hand mixer, cream together the butter, sugar and vanilla until light and fluffy. Add the flour 1/4 cup at a time, and continue to mix until well combined.
- Use your fingertips to press the crust mixture evenly into the bottom of the pan, then bake it for about 15 minutes, or until it’s just beginning to brown.
- Meanwhile, in a separate bowl, beat together the sugar, flour, sea salt, vanilla and eggs. Stir in the pecans, cherries and chocolate chips.
- Pour the filling mixture evenly over the pre-baked crust. Return the pan to the oven and bake it for about 25 minutes, or until the edges are brown and the center is firm. Allow to cool completely before cutting!

And the very serious question of the day: cookies or cookie bars?
Definitely cookie bars. They are always bigger… which is a winner in my book. I love the crunchy corner pieces.
Mmm, these look amazing! Cookie bars seem to always be bigger, denser and richer seeming! Also chewier, and you gotta love a chewy cookie. I can’t do hard/crispy!
Those bars look perfect…a firm crust with an gooey center packed with all kinds of little goodies and surprises. YUM! And great flavors…a chocolate pecan pie that met cherries in bar form. Love it!
That is a tough question! Although I love cookie bars, I’m gonna go with cookies.

I am not typically a cherry loving person, but these look absolutely divine! And ahhhh, you know I loooooooove cookies, but cookie bars might even be better. Mmm.
These look absolutely fantastic! Chocolate and cherry is a heavenly combination.
Love the flavor combination with this bar, though I can imagine they would taste amazing with a whole array of nuts (almonds, perhaps?). I’m definitely more of a circular cookie kind of girl, I always cut really messy bars. Not exactly a problem, but it’s one of those things that irrationally annoys me.
I think cookies more often than cookie bars. You’re right, cookie bars are so much more fun and better and that’s why I think once and a while to have them so they remain fun and special!
YUM those look so delicious! I want one right now..and that is a tough question. I think I have to go with the cookie bars…. They are crunchy (with the crust) annnd chewy all in one… a win-win in my book.
Cookie bars! Dang, Gabriela, you just made what I think should be my favorite cookie bar. Gooey and rich but not overly sweet with cherries and nuts? I was talking about how bitter I am towards love today to my co-workers, but now I think these stole my heart.

And choosing between cookies and cookie bars is virtually impossible! If I HAD to choose, I would probably have to say cookie bars because of their fluffy, gooey goodness. Especially when they incorporate a variety of flavors like these ones do!
These look really delicious. I have never purchased dried cherries before. Do you buy a particular brand or just look for whatever is available? I am thinking these will make a nice Valentine’s treat for my coworkers.
