Apparently it’s slacker week on Une Vie Saine.
All of the “recipes” I’ve posted have been basically childproof. Infused vinegar? Melted chocolate and graham crackers? And now, rice?
Pay attention, though. Though this rice is ridiculously simple to make, it’s by far my favorite way to eat the stuff. You see, I don’t really care for it in Asian restaurants, when they bring you a big ball of it to go along with your entree. Cooked grains in general are kind of meh to me; I’d rather have bread or sweet potatoes than quinoa or rice. But this cooking method, albeit incredibly simple, turns boring old rice into an insanely delicious side dish or even breakfast. And with only one ingredient!
(By the way, I realize that I’m not the first person to come up with this concept. This is just the technique and ratios I’ve found work best.)
Coconut Rice
Yields about 4 servings
Ingredients:
- 14 ounce can full-fat unsweetened coconut milk (do NOT use light!)
- 1 cup water
- 1 teaspoon sea salt
- 1 cup short grain white or brown rice
- In a saucepan over medium-high heat, combine the coconut milk and water and bring them to a boil.
- Reduce the heat to low. Add the rice, stir once, cover, and let sit for about 45 minutes, or until most of the liquid has cooked in. The rice should have the consistency of cooked oatmeal.
- Eat immediately. The leftovers store really well in the fridge, and actually taste better the next few days- the coconut makes things kind of gooey and sticky.
Grains- take ‘em or leave ‘em? I think one of the reasons I failed at vegetarianism was because I just don’t love beans or grains…
I’ve never made coconut rice, but I absolutely HAVE to - this looks awesome! I can leave grains (minus my oats) for the most part. It’s one thing I totally slack in. Sweet potatoes though? I think I eat one a day.

I love grains cooked just plain, but I love them cooked in coconut milk even more! I first tried coconut rice at a restaurant and I loved it so much that I begged the chef for the recipe until he gave it to me ha!

I do like grains, but they are never my favorite part of a meal. I also am lazy at making them, so unless I make a big batch of something early in the week, its likely that I will eat only bread products and sweet potatoes (which are equally delicious, so its fine by me)….
When I do have them around though, I love throwing grains into salads and using them for breakfasts (like adding quinoa to yogurt). I’ve never been a big fan of just having a grain as a side (it just seems boring). This rice could potentially change my mind though….

I’ve never had coconut-rice before, but your photos make it look extremely drool-worthy and delicious! I love the idea of having it cold with cinnamon, yum (everything tastes better with cinnamon, though). In general, I love grains…my housemates probably think I’m insane for the sheer variety of whole grains I keep stashed in our cupboards!
I made something like this just last week!! It was my first time making coconut rice, and now I don’t want to make it any other way!

Cooking rice with coconut milk is pretty much the ONLY way I will cook it now…I just don’t “love” cooked grains. They’re fine to me but never earth-shattering, but coconut milk definitely makes them more along that line
I couldn’t live without grains. Luv me sum rice.

I love coconut rice!
I used to be the same way with grains- I could take them or leave them. But in the last 3 months I’ve really grown to love them. I truly believe it’s allll about the preparation. Plain ol’ brown rice just doesn’t do much for anyone’s palate. (:
According to Kushi (the macrobiotic guru), you can achieve happiness if you eat only brown rice for something like three weeks. I’d rather die.
