When I was a kid, I loved rice pudding. Sadly, it wasn’t considered a “cool food” in the elementary school lunch line, so I’d usually pass it up for a cup of lime or cherry Jell-O.
My breakfast this morning made up for all those lost rice puddings.
 Last night, I added ½ c vanilla almond milk and a medium mashed banana to a prepared cup of Minute ready-to-serve brown rice. This morning I stirred in some cinnamon, topped it with some cashews and raisins, and vegan breakfast rice pudding was born!
Creamy, sweet and filling with that rice pudding texture I love. Win.

This morning’s workout consisted of speed training on the treadmill. I did a three-mile tempo run in about 24 minutes, maxing out from miles 2.00-2.25 at 8.5 mph.
Post-breakfast, I dressed for the day in my favorite sweater from Rugby- it’s super warm and cozy, so I wait for truly chilly temps to break it out!
I paired it with a long-sleeved white tee, my favorite jeans (which keep shrinking at the Laundromat, despite using the lowest dryer setting L) and J.Crew loafers.
After a morning of classes, I came home and dug into a simple salad beast for lunch.
Lettuce, tomato, cucumber, carrots, ½ block of plain tempeh and a big dollop of plain Sabra.
Hit the spot- I missed my greens this weekend!
I also had a gala apple and a slice of sprouted sourdough with pumpkin butter, on my finest china.
It’s an easy week for me schoolwork-wise, so I’m debating whether to bake or go to the farmer’s market this afternoon…
What were considered the “cool foods” when you were a kid? Gushers, Tastycakes and Doritos definitely topped the must-have list in my elementary school. Which explains why I never fit in with my turkey, lettuce and Dijon sandwiches and pots of yogurt.
