Foodie Win


Dinner was super filling tonight!


In my HLS swag bag, I received a baggie of sweet curry powder, which was attached to a recipe. Indian is one of my favorite cuisines, so I thought I’d give it a shot!


I subbed quinoa for couscous and added a little olive oil, and it came out great! Dense and satisfying. The curry-roasted pistachios really made the dish.


On the side, I had a salad with spinach, heirloom tomatoes, cucumbers, EVOO & balsamic, and salt & peppers.



As Freya mentioned recently, the Healthy Living Summit really motivated me to create more meals entirely from wholesome foods. You don’t need of crazy ingredients or massive portion sizes to be satisfied- it’s all about eating the correct balance of filling foods. Kath and Angela are masters at it! This meal was a perfect example of the "real food" ideal.

My parents and I also split a cantaloupe:


And I had two squares of hazelnut-cherry dark chocolate for dessert. Perfection!

Earlier this afternoon, I made myself a smoothie in a bowl:


·     almond milk
·     Vega chocolate smoothie protein powder
·     large handful of spinach
·     large frozen banana
·     spoonful of peanut butter
·     xantham gum
·     ice cubes


Topped with a peach, this was the best smoothie I’ve had in awhile J

I’m off to take a walk with my daddy. My mom and I are giving a French girl a tour of New York City tomorrow, so it will be a full day! Goodnight lives!

What’s the best thing you ate today? From my guac sammie to my SIAB, today was a delicious one ;)

Have you ever tried adding xanthan or guar gums to smoothies? I love the ice-cream like consistency!

heck yes to walking with papa! yummy dinner looks delicious, I love getting samples that inspire me to make new dishes! :)
Xanthan gum goes into most of my recipes...it really transforms gluten-free flours into fluffy delicious baked goods!

this is so funny becuase i was just telling my mom that i want to start eating more "real" foods rather than all that sugar free crap. i agree, whenever i have a healthy meal with good ingredient and a healthy dose of fat, im satisfied and feel better. i must remember this.

Okay, can you please fix me food for a day? Haha, or open a restaurant? Dinner looks amazing - as did lunch and your breakfasts, as always. I love using xanthan gum, but I can't find guar anywhere! Does it make a diff. if you just use one without the other? I love the way xanthan gum makes it thicker - but I've always wondered if adding guar would make it ever better!

you mean my massive bowls of veggies are the correct balance! haha i'm never giving those up :) but i'm seriously in love with quinoa and need to restock my stash asap!

Dinner looks delicious! I love sweet curry powders :) I completely agree with the wholesome meals perspective, too. So satisfying and delicious :)
I think my favorite thing today was my spaghetti squash dinner or carrot cake waffles. Both had been missing from my life for far too long ;)
And I haven't used any of the gums - I talked about it a couple posts ago, but I figure the fruits, veggies, and yogurts in there are good enough in their own [wholesome!] form :)

Your dinner does look fabulous. I love cooking with wholesome and basic ingredients... that's actually how I come up with most of my meals. I take a grain, choose some veggies, a source of protein, and some spices, mix it all together, and hope the combination tastes good :) Best thing I ate today was probably my chocolate pudding oatmeal, but the night is still young ;)

As for the gums, I used to add them to my smoothies all the time, but they caused me horrible stomach problems so I had to stop. I'm glad the pain is gone, but I do miss the thickness they added.

What delightful looking quinoa! Indian is one of my favourite cuisines as well- have you ever tried Ethiopian food? It's similar to Indian, but delicious in it's own way :)
Best thing I've eaten today...perhaps the homemade roasted garlic mashed potatoes and garlic/pepperflake sauteed mexican zucchinis. Mmmm.

best thing i've eaten today is what i'm eating now! roasted okra plus a whole wheat sandwhich w/ hummus, avocado, cheddar cheese, salsa, and honest mustard (weird but good)

Best thing I ate today was an apple, sounds silly but in Iowa fruit is not always good. I miss my big city selections!

It's hard to choose between my meals today! From overnight oats, to quinoa casserole, to the biggest salad known to man... you're giving me a tough choice.

I'd say the hugh jass salad though - honestly, it was what I was craving and sooo good!

I sooo agree about that "balance" thing. I notice when my meals are good carb:protein:fat ratio- I'm satisfied, even if I didn't eat all that much "volume". Sometimes I find just a little extra fat helps too- like If I'm still hungry after a meal, I go for just a few nuts or a scoop of peanut butter (which, I totally dont mind eating peanut butter!!)

and aaah! I wanna get xanthan gum so badly! where do you get it/is it expensive? and what section of the store would I look in, exactly... hahha.

best thing I ate today...hahah I actually had an Amy's Kitchen mac & cheese kids meal with cherry zevia and extra broccoli. so tasty! I love mac & cheese :)

Oh how I love the gums...but I have had to stop using them lately because they give me tummy troubles. Makes me so sad!

Love the smoothie in the bowl!

We have not done the gums in our smoothies though we use them in our gluten free baked goods, it is a must, haha.

We use sunflower lecithin in our smoothies, it helps with texture and creaminess. We love it!

Do it yourself, save money, get back to basics, clean, simple, pure, raw, that's my life!

I made a delicious almond milk, banana, and protein powder shake! That cantaloupe looks so good. I never get it any more, but when I was still in college I could get it every morning

Awh thanks for the shout out!
I had too much good food..spelt pancakes, giant smoothies, cocoa vegetables, peanut butter & banana sauce on tempeh...it was a good day!
I've never seen guar gum round here, but I'm a big xanthan gum fan!

Best thing I ate today (OK, yesterday): peanut butter cookie & chocolate ice cream sandwich at the Meatball Shop on the LES. Epic!!

I do use xanthan and guar gums in my smoothies and "ice creams". I love that thickness!

Best thing I ate today was oranges! Sliced up and eaten 'chipmunk' style, hehe:) Yummy, they weren't sour, but lovely and sweet!

I've been reading about gums a lot lately...but they're kind of out of my price range!

Best thing I ate was a slice of canteloupe from the farmer's market. I ended up buying one, and I can't wait to cut it open and devour it!

I'm all about eating whole foods too! I think I need a little work on it though because I find I usually need massive portion sizes to satisfy me! I'd like to learn more about the proper balance of components in a meal.

if i said that smoothie looked appealing...i'd be lying. but i'm sure it was! the color reminds me of baby poo though. :] hope i didn't just ruin any future consumptions for you.

best thing i ate today? some roasted kabocha. HELL YEAH.
