Parade!


I’m currently sitting in my apartment attempting to re-write a paper while listening to the craziness of the Village Halloween Parade. Parades have never been my thing, but hearing people have crazy amounts of fun while you’re doing homework makes it hard to concentrate!!

This afternoon, I got my snack on with a whole wheat tortilla + salsa:


As well as a slice of sprouted toast with Earth Balance (x2) and a can of straight-up sauerkraut.



Sauerkraut = super random craving. I guess my body wanted salt after the run?

For dinner, I got my daily veggies in with a salad beast.


Tomato + cukes + carrots + romaine + whole mashed avocado + salsa + salt & pepper


With two whole wheat tortillas.


I always get comments inquiring about what kind of wraps I buy- I usually just get whatever brand has the cleanest ingredient list! These are Trader Joe’s Truly Handmade Whole-Wheat tortillas.

For dessert, I had two bowls of frozen grapes + dark chocolate.


As well as a few spoonfuls of this bad boy…


And a mug of homemade vegan hot chocolate.


Almond milk + spoonful of cocoa powder + sprinkle of cake spice + spoonful of agave

Back to work…hope you’re having a fun Halloween night!

Do you like parades? We used to go to a Fourth of July parade every year in my mom’s hometown, but I never really loved them. The Village parade is definitely a sight to see though!

Happy Halloween!!

It ended up being a good thing that I dressed up on Friday instead of last night! In preparation for today’s 12 mile run, I took it easy, eating a huge fried eggplant sub, pretzel slims and M&Ms at Mike’s for dinner, hanging out with friends, and getting into bed relatively early for a prime party weekend. I woke up ready to go!

Breakfast was the usual: Trader Joe’s High Fiber O’s, a banana and almond milk. I went back for another helping of O’s as well.


Mike had agreed to run the first six miles with me, so we headed up to Central Park and completed one loop before he went home. It helped tremendously to have him there while running! At mile 7 I started to lose steam, so I stopped and bought a Gatorade. I quickly chugged about half of it to minimize actually tasting it (I’ve loathed Gatorade since I was a kid), then took a few sips every mile for the remainder of the run. I didn’t notice a huge difference, but it couldn’t have hurt.

Post run I hurried home for some food. I started off with a Barney Butter and pumpkin butter sandwich on sprouted bread.



As well as an entire bag of frozen pineapple chunks.


And half of my jumbo vegan brownie from lunch yesterday + a pumpkin spice scuffin.



No groceries = lots of baked goods instead :)

My appetite must still be catching up with me because all of that left me quite full! I have a feeling the snack monster will emerge within a few hours though… 

This afternoon = homework, grocery shopping and sleep. Quite an eventful Halloween, I know!

Halloween Costumes and a S'Nice Meetup

Bonjour mes amis! I just got home from a meetup with Dori and Dorry at S’Nice, a vegetarian restaurant in Soho.

Dorry is in town from Dallas for a few days and wanted to do a quick vegetarian lunch, so S’Nice’s delicious menu fit the bill.


I ordered the curried cauliflower wrap, stuffed with chickpeas and rice and served with mango chutney for dipping. On the side, I had an order of their roasted broccoli, as well as an iced black tea.



The sandwich was delicious! It was quite dense, so finishing it left me on the verge of stuffed.


Despite my food baby, I still had room for dessert J They have a huge array of baked goods to choose from!


I selected the vegan brownie. It was studded with walnuts and had a slight date flavor to it- moist, chewy and chocolatey.


I also sampled a small bite of Dori’s chocolate peanut butter cookie. I’ll admit that it beat the brownie by a slim margin.



It was great to meet Dori and to see Dorry again! I love blogger meetups J

Last night was a blast as well. It started off innocently enough with a little saltine-eating contest between Mike and I…


The goal: six saltines in sixty seconds.

On your mark, get set…GO!

This picture is horrible but I love it anyway.


The verdict? Both of us needed about three more seconds to swallow the last bites of saltine. It’s way harder than I thought!!

I also hung out while the boys wielded scary knives and carved pumpkins.

Later in the evening, we got changed into our costumes and hit up several Halloween parties. I was incredibly proud of myself for coming up with our costume idea, though we were told it wasn't quite as cool as we thought it was...


Little Red Riding Hood and the Big Bad Wolf…a play on Mike’s last name. The wolf t-shirt was supposed to tip people off with minimal effort, but I told him he should have gone for a wolf head.

Especially since another couple went as the same thing!

Overall it was a really fun night! I’m still debating whether to dress up again this evening.

Last but not least, breakfast this morning: a simple bowl of TJ’s maple brown sugar frosted mini wheats. Yum.

Boo!

Halloween weekend!! Before I head out in my costume tonight, I thought I’d share some memories of years passed:

Senior year of high school:


Clarissa Explains It All. You can’t see my suede platform ankle boots, which were the best part of the ensemble. Everything I’m wearing I raided from my mother’s closet.

Freshman year of college:


If you went to a high school with a uniform, I think it’s an unwritten rule that you have to bring it back and skank it out the year after you graduate. That’s my freshman roomie with me!

Last year:


Mike and I went as Daisy and Gatsby. No one really got it though L

This year? Well, you’ll just have to wait and see. Here’s a hint though…

Today, I continued yesterday’s snackfacing with a multitude of random eats. Besides an unpictured Kashi TLC bar before leaving the Bronx, I had...

Tempt-eh


Last night was yet another installation of the Thursday night dinner club J

On the menu: Pan-Fried Tempt-eh and Coconut Lime Basmati Rice from Eat, Drink and Be Vegan, along with a side of brussel sprouts.


Since ED&BV is my all-time favorite cookbook, I wasn’t surprised that both dishes were winners.

To make the tempeh, I cut an 8 oz package of tempeh into eight strips, then marinated them for about an hour in 2T each of apple cider vinegar and tamari. Then, I rolled them in arrowroot powder and pan-fried them in a skillet with olive oil.


I ended up setting off the smoke detector somehow while making these…they may have been a little crispy, but they were still delicious! I squeezed a little lemon juice on them for an extra kick.


Mike’s roommate even tried a few and gave them the man-seal of approval.

For the rice, I cooked 1 cup of basmati rice in one can of light coconut milk, ½ cup water, and the juice of half a lime. After bringing it to a boil, I reduced the heat to low and let it simmer until all the coconut milk had been absorbed.


Topped with a few red pepper flakes and some more lime juice for extra flava.

Brussel sprouts with salt, pepper and red pepper flakes for veg (I actually ate about half the sprouts while I was prepping them…can never get enough greens).


For dessert, I cut us up a mango, which was unfortunately a little overripe and brown. I ate most of it anyway, but when I pay more for an out-of-season fruit, it’s disappointing to have a bad one!


A few squares of Lindt 85% dark chocolate rounded out the meal.
