Last night was yet another installation of the Thursday night dinner club J
On the menu: Pan-Fried Tempt-eh and Coconut Lime Basmati Rice from Eat, Drink and Be Vegan, along with a side of brussel sprouts.
Since ED&BV is my all-time favorite cookbook, I wasn’t surprised that both dishes were winners.
To make the tempeh, I cut an 8 oz package of tempeh into eight strips, then marinated them for about an hour in 2T each of apple cider vinegar and tamari. Then, I rolled them in arrowroot powder and pan-fried them in a skillet with olive oil.
I ended up setting off the smoke detector somehow while making these…they may have been a little crispy, but they were still delicious! I squeezed a little lemon juice on them for an extra kick.
Mike’s roommate even tried a few and gave them the man-seal of approval.
For the rice, I cooked 1 cup of basmati rice in one can of light coconut milk, ½ cup water, and the juice of half a lime. After bringing it to a boil, I reduced the heat to low and let it simmer until all the coconut milk had been absorbed.
Topped with a few red pepper flakes and some more lime juice for extra flava.
Brussel sprouts with salt, pepper and red pepper flakes for veg (I actually ate about half the sprouts while I was prepping them…can never get enough greens).
For dessert, I cut us up a mango, which was unfortunately a little overripe and brown. I ate most of it anyway, but when I pay more for an out-of-season fruit, it’s disappointing to have a bad one!
A few squares of Lindt 85% dark chocolate rounded out the meal.

I love Coconut Lime Basmati Rice!! Creamy but with some tang.

I set of the alarm in my dorm last year while making spaghetti, so everyone in the building had to leave. Oops!
last thing i made in the kitchen was homemade chicken noodle soup w/ pumpkin pasta -- it was so comforting and delicious! i've def set off the fire alarm before, ooops!
I've never set off the fire alarm, knock on wood. That tempeh recipe looks really good, definitely going to give it a try.

I've been wantign to try tempt-eh for a while now. I have all the ingredients in the apartment, too. Guess I know what i'm making for dinner! lol
Tempeh is delicious, but for some reason I like it best raw!
I just made a salmon/avocado/goat cheese/spinach pressed wrap for lunch.
OK I'm glad you said you ate more brussels than that, because I was just thinking, "Wow, I could never eat that few brussels sprouts." I go a little crazy.
The last thing I made was mushroom dal. But I'm making brussels next!
The smoke alarm at my old house went off ALL THE TIME. It was terrible.
That sounds delicious! And as sad as it is, I don't even remember the last thing I cooked. I think I work too much :/ Probably waffles?
I just baked black bean pumpkin brownies!
My room mates couldnt believe something vegan was sooooo good.
I think what made them so delicious was the fact that I set smoke detector off making them ;)

Sophomore year (which was easily my worst year of college/life -- it was tough) I was living in a pretty big dorm. The kitchens/lounges on each floor had just been redone and were really nice. However, when they redid them, they made the fire alarms SUPER sensitive. One night, I was making a delicious batch of spaghetti and meatballs for me and my roommate to have for dinner. The meatballs were pretty thick and were burning on the outside but still raw in the center, so I just kept cooking them. They were burning and getting pretty smoky. Some boys who were also in the lounge opened the windows for me, but it was too late. The fire alarm went off. The entire building had to be evacuated. Everyone (several hundred students) had to go out onto the street and wait for the fire department to come. Not many people knew it was me (only my friend, the RA, and the building's director), but I was MORTIFIED. I wanted to die, seriously. Humiliating. The whole fire department went into the building and had to investigate to find the "source." They found my burnt meatballs.
For some reason, when we finally got back in later, we still ate the meatballs.
Soo, would you believe me if I said I've never had tempeh? :/ I guess I never found a reason to, but I am quite curious about it!!
Setting off the fire alarm in my house is unfortunately something that happens at *least* once a week. I'm not sure if it's our gas grill or a sensitive fire alarm! All I know is that it's annoying as heck, ha!

So basmati rice is my FAVORITE - so good!!
I used to set off my alarm ALL time in college- such a sensitive alarm... probably for a good reason! LOL
I'm actually cooking now - I put all of the ingredients for chili in a slowcooker before I left!
Every time I cook our alarm goes off. I just wave a magazine in front of it, but its still super annoying!
Mmmm Basmati Rice is my fave!! I seriously can't get enough of it especially when it has cumin seeds in it and the coconut flare ;)

I'm still not a huge fan of tempeh, but I think that's because I've never actually prepared it from a recipe. What's your favourite way to prepare it?

I've noticed Dreea calls for arrowroot powder a loooott in her recipes. Is it essential, do you think? Or could I maybe sub it for something? I have no idea what it is - I thought it was a thickener, but if that was the case it probably wouldn't be necessary to roll the tempeh in it before frying...?
I don't think I, personally, have set the fire alarm off (yet)! It'll probably happen this weekend now that I said that :P
