This morning, I took advantage of the beautiful weather by going on my first run in awhile. I miss being able to pound the pavement frequently! I did my favorite roughly four-mile loop without a watch. I know it was slow, but I just enjoyed being outside again!
After exercising, I made myself a refreshing tuna salad. I used to eat these all the time a few summers ago, and the warm weather made me crave one.
Baby spinach, cucumber, romaine, carrots and 7 oz can of dolphin-safe tuna, topped with balsamic vinegar and oil. I also had a slice of sprouted bread to sop up the remaining dressing.
I think it's the fish that reminds me most of summer. Seafood is the ultimate beach food for me, and even though this tuna came from a can, it still brought me back to crab shack dinners at the New Jersey shore.
The other reason I chose tuna is that it packs a significant protein punch. I'm not one of those people who needs protein to feel full- whole-grain carbs are actually the most satiating foods to me- but since I'm trying to up the strength training a bit, I want to incorporate a bit more protein into my meals. No counting or anything, just more fish, beans, tofu and the like!
Along with my salad, I also had a bowl of sliced champagne mango and strawberries.
As well as several handfuls of Pom pistachios from the Costco-sized bag. Addictive little buggers!
In honor of the weather, I'm sporting a floral miniskirt. It might finally be time to put away the jeans for good?
