February 28 already?! I can't say that I'm sad to see this month go. I always look forward to the first signs of spring in March! Hopefully the lion won't stick around for long and it'll go out like this....

I was planning on reviewing my February goals this month, but looking back on old posts I realized I never set any. Oops-a-daisy. That's probably a good thing though, considering that if I can't remember to write them down, there's no way I would have remembered to accomplish them :) I've already got two goals lined up for March though, so I'll talk about that tomorrow.

While straightening up my cabinets last night, I discovered a container of Minute brown rice I'd totally forgotten I had. I decided to incorporate it into this morning's breakfast and put together a bowl of protein-packed
vegan rice "pudding."
Last night, I combined:
- 1 c brown rice
- 1 mashed banana
- 1 scoop vanilla Sun Warrior protein powder
- about 1/2 c almond milk
- maple syrup to taste
I let it all sit in the fridge overnight, then topped it with walnuts and cinnamon for a little flavor and healthy fat.
The result was delicious. I love the texture of rice puddings!
Time to get this day started- happy Monday!
