Tonight, I was craving only one thing for dinner: roasted veggies. A lot of them.
That would be chayote, carrots, onion, brussel sprouts, cauliflower and tomato roasted in a generous coating of olive oil, salt and pepper, all topped with salsa.
I had two whole-wheat tortillas on the side, despite being stuffed from all the fiber in those veggies. (Went back for seconds…I love carbs. Especially tortillas.)
For dessert a bit later, I had a bowl of pomegranate arils with a stick of Trader Joe’s dark chocolate, which I later dipped in some Barney Butter.
Can you believe I’d never had pomegranate arils before yesterday? I purchased one at Whole Foods last week, and last night Mike taught me how to cut them open. A little tutorial (my apologies for the blurry pics…he was working fast and the lighting was terrible!):
Start by chopping off the top inch or so of the whole pomegranate, until the red arils start to poke through.
Make a shallow cut down the side of the fruit, in order to pull it apart.
Like so.
Fill a cereal bowl with water, and gently pull the arils from the skin. Let everything fall into the water.
The detached arils will sink to the bottom, while the skin will float to the top. It’s an easy-peasy way to catch all the remaining skin!
Drain the arils and enjoy!
Mike was very proud that he’d taught me to do something produce-related. When it comes to wielding sharp knives, I’m a huge baby!
Before I go, I wanted to share tonight’s homework distraction:
Remember these? I didn’t even know they still made them! They were the coolest candy in elementary school. After re-sampling all four flavors, I’d have to say that the ridiculously sour watermelon is still my favorite, even after all these years!
Have you ever had a pomegranate? Know of any creative ways to use them?
What candy do you remember as being “trendy” in elementary school? My fifth grade teacher used to give us each a Lemonhead on Friday afternoons. I still think of Mr. Norton whenever I see them!

I love pomegranates! Last year a local grocery store had a bunch of pomegranates in the reduced produce bin, so I de seeded them and froze the seeds. They can be easily defrosted on low in the microwave! I enjoyed pomegranate arils all year long.
Watermelon flavor of anything is always the best, if you ask me!
I definitely remember Airheads and Jolly Ranchers.
I loooved pomegranates this time last year. Seeing them crop up again is making me wonder whether I'll have the motivation to have an addiction to them again this year - they're such a hassle to eat!! Lov the tut, though. I never did the bowl of water thing, but I remember it being a pain separating the skin from the arils.
And I remember having warheads, but running them under water until the sour washed off! haha. Sour patch kids or those sour gummy watermelons were another hot item :)
I love mega warheads. LOL. I really like pomegranates too- I put them in salads and I've even frozen them before for a sweet little snack.
In school, we always used to lust after Tootsie Rolls! They were a definite favorite, not to mention buttered popcorn-flavored jelly beans!
first of all what an AWESOME blogger meetup! i've always wanted to go to spring street natural! and it was gorgeous out and so perfect out :) glad you had such a great time!
in life i love easter mainly because of the mass influx of jelly beans!!
We ALWAYS ate warheads! They were awesome! Now I think I wouldnot enjoy them, but I loved them when I was younger.
I love pomegranates, but they are super messy when you try to get the seeds out!
WARHEADS! Loved those when I was in middle school!
o man they were the "cool" candy in my school too! and for a while so were cinnamon altoids? huh? lol i dont know either!xoxoxo
Pop rocks! I used to think it was so cool the way they fizzled on my tongue :)
roasted veggies<333 my fav is potatoes, sweet potatoes and carrots. yum yummm!!
omg, i used to hate those candies! I would rinse them under water to get all the sour stuff off and then eat the sweet :p
growing up..hmm. hhaha I rememebr ring pops and baby bottle pops! both tasty, but ring pops were sticky hahah
Warheads were the coolest candy in my elementary days too! I remember a kid who used to have a huge tacklebox full of the-seperated by flavor-and he would sell them on the playground!
Thanks for the flashback. :)
war heads! ah i remember those!
I love pomegranate arils. I forget about how amazing they are but your post is making me crave them. Sour patch kids were and still are trendy in my social world ha!
I'm very familiar with pomegranates but I hate them! Well, I don't hate their flavor, but I hate the texture of the seeds and taking them out and all that. Its just too much word and I don't really feel satiated with them. I do like pomegranate drinks and pomegranate sauce with lamb chops!
Warheads were pretty trendy, as were the "fun dips" which now that I look back, are such germ pools! I also remember blow pops were pretty cool and I remember that "bottle caps" was hot property when it came to halloween candy trading,
i remember a lot of suckers!
Ring pops. So good but so sticky!
I love pomegranates, especially in salads!
Haha I remember Warheads! We used to have competitions to see who could stuff the most in their mouth. :P Jawbreakers were also really big here too.
Your salad looks so good!
I've never had pomegranate before but thanks for the tutorial since I've heard it's time consuming to take them out.
Warheads (love the apple flavor!) and Spice Girl dipping lollipops were the things in school for me.
I think pomegranate arils are so pretty!! And I lovedd Warheads- the blue kind!
I used to love War Heads. Those, and fire balls. Something about possibly crying from candy made them so much fun.
confession: i still have never had a pomegranate. foodie blogger fail. and there are crops right down the street!
omg do you remember those candy sticks you would dip in some sort of sugary flavored powder? tab? no, that's a soda. dips? i forget, but that was staple for me at little league games!
I love eating pomegranate plain, just like how you did! I haven't had one in quite some time though...now you've got me craving pomegranate!
mmm, I love pomegranate!! haha, and i remember having competitions in elementary with those sour air heads!! :)
