The Best Way...


What’s the best way to spend the afternoon after a morning of running?

Baking, of course J


I loved how simple the fudge was to throw together- just four ingredients and five minutes!


After refrigerating for an hour or two, I sampled a chunk.


It was melt-in-your-mouth creamy and perfectly chocolatey. I’d love to add some walnuts to the next batch!

The peanut butter cookies came out just as well.


I underbaked them just a tad so they came out super soft and chewy.


These are the real deal- so peanutbuttery that your fingers glisten with oil as soon as you pick them up. My apartment still smells like peanut butter- which is just fine with me!

The best part about running ten miles is eating two cookies and unadvisable amounts of cookie dough and fudge, and still having an appetite for dinner.

Mike had never been to Quantum Leap, so when we decided to go somewhere cheap and easy for dinner it seemed like a great choice.

I had a small green salad with homemade dressing to start.


For my entrée, I chose the Big Leap bowl:


Organic quinoa, grilled seasonal vegetables, chili beans, grilled tofu and burdock sauce.



The veggies were perfectly prepared, the quinoa was well-seasoned, the tofu wasn’t mushy, the chili beans were flavorful and the sauce wasn’t too oily or heavy- exactly why I love this restaurant. They make simple foods so good!

Mike had the Big Leap burger, piled high with onion rings, cheddar cheese, BBQ sauce and an avocado half that I swiped from him.


The two of us were intrigued by the vegan black sesame soy ice cream on the dessert menu, so we decided to split an order of it.


The verdict? Um, different. It definitely wasn’t bad, but it was kind of weird as an ice cream flavor- salty and complex. Probably the most adventurous flavor I’ve ever come across!

I agree, Mama Pea's cookies look pretty bomb!

I always underbake my goodies. I hate dry cookies/muffins etc so I'm a bit paranoid about my super hot oven.

ahhhhhh congrats on the 10 miler :) that's so exciting and today was seriously the perfect day to get a good run in! i'm so excited for you haha

i spent the whole day baking too! it musta been in the fall air today :) i've got my eye on mama peas pb cookies and that fudge for quite some time now!

I love fudge. all fudge. chocolate and maple are at the top of my list though. god i need some...now. guess i'm going to buy some earth balance tomorrow. aw, shucks, how aaawwwwful.

I would have to say the most unique ice cream I've tried was green tea flavored. Pretty unique and also delicious!

I love marble fudge!

Well now I need to satisfy my sweet tooth, for the second time tonight. :)

I love this maple/brown sugar fudge that my friend's mom makes. It puts me in a serious sugar coma!

Wow, that's such a bizarre ice cream flavour. You guys are brave for trying it! I don't think I've tried anything too weird before other than a beet sorbet. It was really good!

I am SO making that fudge. I may not be chocolate *biggest* fan, but I am when it comes to being in dark, creamy, fudge-y form :)

Congrats on your 10-miler!! When is your 1/2 marathon...it's pretty soon, isn't it? You sound READY! :)

As for ice cream, I'm probably the most boring person ever. I really like strawberry sorbet. There's an ice cream shop in St. Paul that has strawberry lemonade sorbet, and that might be the most adventurous I've ever had...

You MUST go to Lula's on 6th Ave b/w Avenues A & B and get their pumpkin spice/cake batter soft serve! its awesome!
