After a relatively veggie-less weekend, it always feels good to dig into a big pile of produce for lunch!
I'd weirdly had a vegetable aversion since the middle of last week, but I think today's salad more than made up for the lost days. I made a salad beast using a few cups of steamed kale, a diced tomato, three chopped carrots, a handful of dulse flakes, and a humnut sauce dressing (3T garlic hummus mixed with 3T nutritional yeast and a splash of water). Two slices of Ezekiel sprouted bread rounded out the meal.
Alongside my salad, I had a gala apple and a baggie of mixed nuts and dried fruit I'd received in my veg food fest goodie bag.
Since my knee is still really sore and my one afternoon class was about a fifteen minute walk from the previous building, and farther still from my apartment, I decided not to go. I rarely skip class and always feel so guilty for not going. I'll never forget taking a practice AP US History exam in high school when I was deliriously sick. The teacher actually asked me if I wanted to leave a few times, but I was determined to finish that test! I've got a ton of schoolwork to get caught up on as well, though, so this afternoon will be devoted to work, not lounging- and I know I won't get sleepy with a freezing cold bag of ice under my leg ;)
