The dinner I came up with was fast, simple, and mighty tasty: a vegetarian calzone!
I had a ball of Trader Joe's whole-wheat pizza dough in the fridge, so I broke off a sizable chunk, spread it out and filled it with marinara sauce, Daiya vegan cheese shreds and a few crumbled Trader Joe's meatless meatballs before baking it for about ten minutes at 425*F. The result was cheesy, gooey, faux-Italian goodness.
The best part about making your own calzone is that you can make the crust- aka the best part- as doughy as you'd like. The edges on this baby were pizza-crust thick!
Alongside my calzone, I steamed up a mountain of frozen broccoli.
I had a few clementines after dinner but was still craving something sweet, so I restarted my oven to make a batch of Julie's coconut granola.
I followed her recipe pretty closely, but threw in a few tablespoons of unsweetened shredded coconut and therefore added some extra coconut oil to balance it out. The extra oil meant it took awhile to solidify, but once it did, the finished product was as good as I'd hoped.
Did you know that there are granola-stealing gremlins living in my oven? It's the only explanation for the fact that half the batch is already missing. Sneaky little rascals.

What movies/shows/things scared you as a child? Any lingering fears? My brother let me watch The Shining while "babysitting" me in third grade. I slept in my parents' room for months. I also had a huge fear of tornadoes after learning about them in elementary school science class.
