Nothin' like a comforting meal on a cold, rainy night!
This evening, Mike and I were planning on going out for dinner; however, the constant downpours put a definite damper on our desire to walk around the city! Instead, I ended up making us a pot of Angela's Quick and Easy Vegan Alfredo to enjoy in my dry apartment.
I thought I'd followed her directions to a tee, but realized once I'd removed it from the food processor that I'd forgotten both the tahini and the paprika. I don't know where my head was! As a result, the sauce was slightly bland, with a definite mustard taste from the dijon. I still enjoyed it, but since Mike isn't a mustard fan, it wasn't as good as I'd hoped.
I'd added half a diced zucchini to the cooked pasta, which ended up being an excellent complement. I'm glad I still enjoyed it, because there are plenty of leftovers!
For a non-dessert "dessert," I'd also baked us a loaf of Mama Pea's Toasted Almond Flax Banana Bread.
Here again, I followed the recipe exactly, only reducing the amount of sugar from 1/2 cup to 1/4 cup. It came out delicious, especially for having so little sugar. You can really taste the sweetness from the banana!
Mike and I have been snacking away at it while waiting to go out for a friend's birthday party tonight. Meanwhile, I'm pre-gaming Gabriela style with some fermented bacteria. Yum.
