I started off my day with a vinyasa yoga class at the gym. For some reason I absolutely not get my brain to shut up and my thoughts were focused on a million different things, but it nonetheless felt amazing to stretch. My hamstrings had felt tight ever since the Red Carpet Ready class I took on Thursday, so some downward facing dog was just what the doctor ordered.
Immediately after class, I headed to Whole Foods for my weekly grocery trip. It's been awhile since I shopped there, so I eagerly filled up my basket with favorites like tempeh, nutritional yeast and Daiya. My eyes ended up being bigger than my arm strength, since I actually had too many groceries to carry home, but I'm eager to make some different meals in the upcoming weeks!
For lunch a bit later, I met Gracie at Spring Street Natural for a late lunch. Since I missed her birthday dinner last week, we were overdue for a little celebration!
My lunch date! |
Still wearing my yoga clothes! |
To start, I had a slice of their delicious rosemary sun-dried tomato bread, probably my favorite part about eating there.
I'd had two pretty substantial snacks earlier in the morning, so I wasn't too hungry and chose the steamed organic seasonal vegetable plate as my entree.
Kale, cauliflower, broccoli, carrots and bok choy served over brown rice, with green goddess and soy-sesame sauces on the side.
Simple, but oh-so-good. All the veggies were well prepared, and though I'm not usually a big rice person, this batch had a more complex, nutty flavor than I'm used to.
Meanwhile, Gracie ordered an almond-veggie-cheddar burger.
She shared a bite with me, and ohmygoodness was it delicious. Very crisp, almost crunchy, on the outside, with a chewier inside. Such a unique flavor combination, too!
While taste-wise, this lunch was super satisfying, I realized once I left the restaurant that it didn't have much fill factor, so I'm currently snacking on some pita + hummus and cashews. Need some protein with my veg ;)
I hope you're all having a relaxing end to your weekend!
