Hi loves! Can it really be Sunday night already? I’ve been a busy girl since I last posted!
Saturday morning, Mike and I were signed up to run the New York City Urban Dare, a 2-person “race” and scavenger hunt that sends you around a city looking for vaguely-clued landmarks.
Since the race was advertised on several running sites, I assumed that it would be a physical race; however, Mike and I were both disappointed when we realized that it was more of a trivia competition. Neither of us are Jeopardy buffs! Furthermore, while we opted to run the course, it became clear that we were in the minority- most of the teams were taking the subway. Plus, the race was pretty poorly organized, beginning half an hour after it was supposed to because we were waiting on late contestants.
Overall, it wasn’t a great experience, mostly because it just wasn’t what we were expecting! For trivia lovers, it’s definitely a fun activity, for runners, not so much. You win some, you lose some I guess!
Breakfast before the race was a huge bowl of Fiber One, spelt flakes and blueberries.
Lunch didn’t come until nearly 4 pm! Though I snacked on a cookie dough Larabar during the race, I was hangry. Mike and I stopped at S’Nice, a vegetarian sandwich shop in Soho.
I ordered the vegan sushi sandwich: avocado, tofu, cucumber, nori and wasabi nasoyaise.
The flavors were great- so creative to create a “sushi” sandwich! My only gripe was the portion size. For $9, the sandwich was rather small. I made up for it by snacking on dark chocolate and peanut butter back at my apartment.
Later that evening, Mike and I headed up to the Bronx for a party. We split a jumbo black and white cookie from Zaro’s bakery on the train:

Being lazy college students, we had peanut butter sandwiches for dinner. I paired mine with a honeycrisp, plus some unpictured pretzel rods.
The party was a ton of fun!
Lots of dancing, flip cup and chocolate peanut butter filled pretzels involved. I didn’t get to bed until 4 am!
As a result, I woke up late this morning, had a Clif bar from my purse, and headed home for a real meal.
Salad with carrots, cucumber, tomato, lettuce, a Dr. Praeger’s veggie burger and mustard, plus a whole-wheat pita with hummus.
Hoooooooneycrisp!
Mid-afternoon, I snacked on some Three Sisters cinnamon sweets that the company sent me to try a few weeks ago.
Cinnamon Toast Crunch was one of my favorite cereals as a kid, and I loved that this got the taste spot-on without all the artificial ingredients.
For dinner, I was craving comfort food, so I decided to try my hand at recreating a vegan grilled cheese. I combined 2T nutritional yeast with 2T Cedar’s roasted red pepper hummus, mixing it until a thick paste had formed.
I spread the “cheese” on two slices of Arnold whole-wheat bread, added a sliced tomato, and grilled it in a pan with a drizzle of olive oil. Delicious!
On the side, I made myself a mountain of kale chips. Yup, vegan comfort food at it’s finest!
Following dinner, a serious chocolate craving struck. I had a banana topped with homemade “chocolate sauce” (1T cocoa powder and agave plus a splash of almond milk):
And then pulled out the big guns: an entire bar of TJ’s dark chocolate. Chocoholic is my middle name.
Following my busy weekend, I’m going to sleep early tonight! Can’t wait to snuggle up in bed J Hope you have a wonderful end to your weekend!

Looks like you had fun at the party, you and mike are seriously the cutest, I love the pics of you two : ) and I love PB filled pretzels, I would of crammed those!

What a fun weekend! Carbs are the ultimate comfort food for me. One that comes to mind is cornbread!
I've heard of that sandwich before, it sounds delicious! Very creative. I've heard of scavenger hunts like that before, even if it wasn't what you expected, it's always fun to do something a little different like that!

I don't really try to healthify my favorite meals...but I do try to get healthier versions of my favorite cuisines. Like I love fish tacos from my fave Mexican joint. I don't recreate them at home but will make healthier Mexican inspired dishes instead. Its mostly my lack of kitchen creativity that keeps me from recreating the others.
I love that grilled cheese! Grilled cheese with tomato soup was definitely one of my favorite combos as a kid. My two favorite "comfort foods" are rare indulgences but luckily work great veganized - mac and cheese and chocolate chip cookies. I love every vegan mac and cheese recipe I've ever tried, which must make me weird.
Bummer the race was a let-down! I've found myself in similar situations when it comes to horse shows...expecting to show up and find a bunch of well-put-together riders and horses to compete against and then realizing it's practically in somebody's backyard :X Made me feel a little over prepared to say the least!

Kale chips are currently my favorite thing - so true it's such comfort food!! My favorite comfort food is angel hair pasta with tons of butter and parmesan ... siiigh I havent had that in so long, but one of these days I will make a vegan version.
My new job is right around the corner from TJ's...those chocolate bars are, as my grandma says, "the best deal in town!"

hmm comfort food,,, peanut butter. whenever im feeling down, a good scoop of pb does the trick. I also REALLY like pot pies haha. i love amys nondairy one, and i tried a veggie one from whole foods before. i jut loooove thm- creamy sauce, delish crust, veggies! im on the lookut for more natural/orhanic bands. let me know if u see any !! :)

Aww cinnamon toast crunch!! I have that on my blog like multiple times a week! I'll have to try the off brand of it sometime. And the idea for the bananas with chocolate sauce on top looks so good! It reminds me of fondu nights. Sounds like you had a great weekend!

I went to bed at 4:15am all weekend, but had to get up by 10am all days. Ugh.

healthifying things...well, I have veganized thin mints, samoas, reese's pb cups, peppermint patties, yes, i have veganized them and made them GF and mostly soy free too, but are they healthy? i dunno. Is eating an assload of chocolate "healhty"? Beauty is in the eye of the beholder on that one :)

Comfort food... chicken pot pie, macaroni and cheese, and my mom's spaghetti. I definitely have healthified versions but sometimes you have to go with the real deal!

I did the same kind of race called The Great Urban Race. It's actually pretty physical if you know where to go- my cousin and I sprinted alllll over DC. The key to winning? iPhones to Google all the clues haha

I love your vegan grilled cheesed - I love grilled sandwiches and rarely think to try it with a hummus/veggie sando. BTW speaking of sandos, I love 'Snice's!
Have you ever seen or heard of "The Amazing Race"? It's a reality show where they race around the world, solving clues. It seems like they were trying to recreate that at your race but clearly it didn't work very well haha! Glad to see you're doing well girlie!!! :) :)
my friend did that race when it was in boston! she said it was a lot of fun, but def more a scavenger hunt than physical race ya know?

Sorry about the race. I have not done too many races, but I would hate to put so much time into getting ready for one and it suck.
