Hi everyone! I’ve got a lot on my plate this weekend, so I decided to ask some of my favorite bloggers to step in and write a few guest posts for me so I can unplug a big. The first comes from Averie and Love, Veggies and Yoga, which is one of the first blogs I ever read. When Gabriela asked me if I could help her out with a guest post, I had no idea what to write about. I actually spent many days pondering what her readers would enjoy. I am still not sure if you’ll enjoy this post, but I hope so.
Because it’s my hunch that Gabriela’s readers are younger, possibly in college, possibly don’t have full kitchens, or are single and don’t want to cook large amounts, and also don’t have extra time or money to devote to complex recipes with long or expensive ingredient lists, I wanted to showcase some recipes that I think will be winners on all fronts.
All of the following are:
Raw, No Bake, or Microwaveable
Vegan
Gluten Free
Easy
Fast
Minimal dishes and cleanup
No fancy, exotic, or expensive ingredients
It’s my goal to feed myself and my family awesome tasting food that’s easy to make, plant-based, and without sacrificing one ounce of the taste or drool factor. If it tastes “healthy” I really don’t want it. What good is “healthy” if it tastes like cardboard?
I also don’t want to be in the kitchen for hours. I have a child, a fulltime job, and ya know, a life.
Here are some of my favorite recipes with the above goals in mind and I hope you enjoy them:
Combine the ingredients in a bowl, mix together with a spoon, nuke for a few minutes, and breakfast is served. Or a snack is served.
And these are portable, too. Wrap them up in plastic wrap or a baggie and throw them in your purse or bag and you’re all set.
Zucchini noodles are filling without being heavy and even if you don’t “have to be” gluten free, many people find they feel better when avoiding gluten. I find raw zucchini pretty neutral so you can get creative with the sauces and dressings.
If you don’t have a spiralizer, simply use a vegetable peeler and make “ribbons” for your noodles. And while you’re at it, you can include cucumber or carrot ribbons, too in the salad. A light, easy, raw salad that’s perfect for summer.
Chocolate + peanut butter + oats + microwave = Your cravings handled about two minutes later
Wrap these up and bring them with you so you’re not dependent on buying bars or buying snacks while you’re out.
You will never pay ridiculous prices again for pre-made spring rolls when you realize it’s as simple as laying some veggies into rice paper wrappers and rolling up.
The peanut sauce comes together in two minutes with a whisk. So easy. And drinkable.

These are a crowd pleaser. I have never made these for anyone who didn’t love them. No one guesses they are vegan (no eggs, no butter) and also gluten free (no wheat flour). They take literally 60 seconds to make and you can use a Magic Bullet, (mini) food processor, Vita, or any blending device you have. Just blend a couple ingredients together, add the chocolate chips, roll into balls and you’re set. If you love cookie dough like I do, then these have your name all over them.
