I'm going to make a great grandmother some day.
The only problem was that we're running low on just about everything in this house. No canola oil, no cocoa powder, barely any flour, no maple syrup...you catch my drift. All my usual baking go-tos were out of the question, so I decided to create something new.
I dug through the pantry and came up with Nutty Granola!
- 2 cups rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/2 cup unsalted peanuts, chopped
- 1/2 cup unsalted cashews, chopped
- 1/2 cup roasted sunflower seeds
- 1/4 cup coconut oil, melted
- 1/4 cup agave nectar (you could substitute honey, as well)
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- 1 teaspoon sea salt
Preheat oven to 300*F. In a large bowl, combine oats, coconut, peanuts, cashews and sunflower seeds, stirring until evenly distributed. In a separate bowl, whisk together coconut oil, agave, vanilla, cinnamon and sea salt. Pour wet mixture into dry, and stir until dry mix is evenly coated. Spread onto an ungreased 9x13 baking sheet. Bake for 10 minutes, stir, and bake for another ten minutes. Allow to cool for a few minutes before digging in!
I didn't follow the very last part of my instructions and actually ended up burning my mouth a bit sampling this stuff. It's more cereal-like than clustery, but contains a nice amount of crunch and just a bit of sweetness. I'm looking forward to including it in my breakfast tomorrow!
This would probably be good with any combination of nuts and seeds. The coconut makes this more unique than most traditional granolas.
