Waffling

Good morning, friends! Happy Monday! Is it weird that I actually enjoy Monday mornings? To me they always feel like a fresh start. Feel free to slap me.

This morning for breakfast I tried out something very out of the ordinary for me.


Waffles! Van's brand were on sale at Whole Foods yesterday, so I bought a box of their organic flax variety on a whim. This morning, I topped them with a "protein frosting" inspired by Katie (1 scoop vanilla Sun Warrior protein powder, drizzle of maple syrup, shake of cinnamon and a splash of water), along with a sliced banana and a sprinkle of chia seeds.


Yummy! They were actually far sweeter than I expected them to be with only 3g of sugar- not that I'm complaining, of course :) The chias added a nice texture to the chewy waffle and creamy frosting, as well.


Growing up, my family was always more into pancakes than waffles. I actually don't think ever ate a whole one until I started dating Mike, who loves them and turned me onto the glory of huge, dessert-like Belgian ones. Is it considered a waffle faux-pas to eat the bananas first and then fold them taco-style to finish?

Breakfast definitely hit the spot after this morning's workout! I woke up early and headed to the gym for an elliptical session:


This workout wasn't super exhausting, but it definitely wasn't easy, either! I followed it up with some abs and stretching.

Waffles or pancakes? Is your family more of one or the other, and which do you prefer now? We've always been blueberry pancake people, which I love topped with I Can't Believe It's Not Butter spray (what my grandparents always had on hand).
