After searching through my pantry for some new ingredients, I decided to incorporate sunflower seeds and sunflower seed butter into a snack-like baked good. These aren't very sweet, but they are still delicious!
Sunflower Snack Bites
(makes approximately 18 cookies)
- 1 c rolled oats
- 1/2 c + 2 T sunflower seed butter
- 1/2 c roasted hulled sunflower seeds
- 2 T ground flax meal
- 2 T agave nectar
Preheat oven to 350*F. In a small bowl, prepare flax eggs by combining flax meal with 6 T room temperature water. In a separate bowl, combine oats, agave and sunflower seed butter, mashing with a fork until well mixed. Stir in sunflower seeds. Finally, add flax eggs and mix well with a fork to incorporate. Drop by rounded tablespoon onto a cookie sheet prepared with non-stick spray. Bake for approximately 12 minutes, or until edges are starting to brown. After removing from oven, allow to sit for a minute or two before moving to wire rack to cool completely.
These little guys are bite-sized and full of healthy fats, with a hearty consistency and crunchy texture. You can definitely taste all the sunflower in these!
They're the perfect healthy, bite-sized way to have something a little sweet but completely satiating.
