Spring Peepin'

This morning, my daddy-o and I took advantage of the nice weather with a long walk through a national park in our area.

The trees were still bare and the landscape was rather grey and unphotogenic, but we did hear some spring peepers chirping! I thought they were bugs, but my dad told me they're actually little froggies.


(I'm not a fan of creepy-crawly things like bugs or reptiles, but for some reason I find frogs and turtles to be adorable.)

Our hour-and-a-half long walk took us on a leisurely 4.3 mile loop around the park. We saw lots of other walkers, runners and bikers out enjoying the pretty day as well!

When we got home, it was lunchtime. My parents purchased a bit too many greens on their last Costco trip, so I made a salad in an effort to eat some of it up.


Spinach, baby carrots carrots, cherry tomatoes, cucumber, and pickles topped with Sabra sun-dried tomato hummus and eaten with two whole-wheat tortillas.


I eat a lot of salad, and while it might get repetitive to look at, I really do think they're the best way to eat vegetables. Each one packs probably 4-5 servings of veggies, which fulfills most of my daily quota and leaves room for me to eat other delicious things, like copious amounts of nut butter and cereal, for the other meals. Plus, they make an excellent vehicle for eating hummus :)


Along with my vegetables and whole-grains, I also had an apple for fruit and some dry roasted edamame for protein, as well as some unpictured Marcona almonds and pistachios. It's an addiction, I tell ya!


Now, I've better get back to my afternoon baking project....about time for my favorite part!
