From Rap to Crooners

I'm currently on my way back to the city now, but I had time for one last meal at home before I left!


Since I only used half a block of tofu for last night's scramble, I decided to make some BBQ tofu with the leftovers.


I simply sliced the 'fu, brushed both sides with a liberal amount of organic BBQ sauce, then baked it for approximately 45 minutes at 400*F before enjoying it sandwich-style on sprouted bread with mustard.


Along with my sandwich, I had some baby carrots, almonds and a sliced Fuji.


This made for an incredibly filling meal- and I hit all the food groups, as well! Protein, whole grain, fruit, vegetable, and healthy fat. Perfect after this morning's workout:

First, I completed Janetha's 20-minute elliptical HIIT, then followed it up with level 2 of Jillian Michaels' 30 Day Shred. It's been awhile since I used that DVD, and I forgot how much it always makes my shoulders burn!

Ever since The Fitnessista posted her video yesterday, I've been on a Michael Buble kick. I go through phases with what I listen to: last week I had Eminem's The Eminem Show album on repeat, and this week I'm all about the soulful crooning. Go figure. I just downloaded a few new Buble tunes, and Hold On is my current fave. Doesn't his voice just make you swoon?
