So while I hadn't given my Lenten sacrifice much thought these past two days, it was hard not to when I walked into our dining room this evening and saw this:
Glad to see our chocolate stash has reached apocalyptic proportions during the only time that I can't have any. I made sure dinner was extra delicious as a result!!
Chuck's most recent post reminded me that it's been awhile since I had an avocado, so for tonight's meal I mashed a large one with salsa, lemon juice, salt and a diced tomato, then served it over spring mix.
And I was instantly reminded why I ate this meal so often a few months ago. It's delicious! Of course, two quartered whole-wheat tortillas were necessary for dipping.
Yum.
After that, I took a nosedive into the pumpkin seed, Marcona almond and pistachio jars, and I haven't come back up since. Nuts and seeds are the the most addictive food ever! I'm pretty sure a "serving" should be considered about three cups. And as a bonus, they make a pretty good alternative to chocolate :)
