Ahhh-maaa-zinggg

That's what today's lunch was.




A few months ago, I received a jar of Tropical Traditions coconut peanut butter through a giveaway at The Athlete's Plate. Since at the time I had several jars of nut butter already open, I stashed it in the pantry and kind of forgot about it.


Boy, am I glad I rediscovered this jar!


For today's lunch, I spread a thick layer onto a slice of Alvarado St. Bakery sprouted bread, then topped another slice with a handful of fresh blueberries that I'd microwaved, mashed, and mixed with a smidge of agave, since they were a little under-ripe.


Holy deliciousness. I never wanted this sandwich to end. Just check out the ooey-gooey melty innards:


Words can't do this combo justice. Just try it, okay?


The only caveat was this:


One teaspoon? Is that supposed to be a joke? I have a hard enough time sticking to the two-tablespoon thing with nut butter. Maybe it's to discourage people from eating all "94" servings in one sitting, because I totally could...

Alongside my sandwich, I had a crunchy Gala apple with cinnamon.


And then this happened:


It was almost as good atop dried mango and pineapple as it was on that sandwich!

This morning's workout was a one-hour BodyPump class. Normally it's one of my favorite forms of exercise, but this morning's routine was nowhere near as good as it usually is. Instead of sticking to a specific release, the instructor mixed up the tracks, making it far easier and less energetic than usual. I upped my weights a little to compensate, but I'm hoping the next class I attend will be better!
