Mexican Food and Titanic Breakfasts

My friend Cassie is here visiting Jillian and I for the weekend!

Senior prom...today is the first time I've ever looked at this photo and thought we look young
Cassie, Jillian and I have known each other since the sixth grade. There's just something special about being with people who have known you through all your awkward stages and teenage drama, and still love you anyway :)

Last night, we picked Cassie up from Penn Station and headed straight to dinner. We were hangry! Mexican food seemed like a tasty, easy option, so we went to Bamboleo, a fun place with well-priced food on Bleecker Street.

As soon as we got there, we placed an order for tortilla chips + salsa:

And a pitcher of passionfruit margaritas. Yumm.

The chips were totally gone by the time our entrees arrived. I chose the vegetable taco salad, which contained beans, roasted vegetables, lettuce, pico de gallo and guacamole in a taco shell.

These taco shell bowls are the best. So flaky and delicately crunchy.

We spent a good hour or so just sitting there chatting. I love to catch up with these two! After dinner, we headed back to Jillian's apartment for a girls' night. Plentiful Dove heart-shaped dark chocolates and Sweethearts were consumed. My stomach felt so wonky this morning because of it!

The cure for sugar nausea? Banana oat bran!

This was a super-simple mug containing
 - 1/2 c oat bran
 - 1 c almond milk
 - sliced banana
 - vanilla extract
 - 2 T ground flax meal
 - stevia

Served up in my favorite Titanic mug...and made even cooler by the fact that third-class passengers on the Titanic were actually served oats for breakfast, along with smoked herring, roasted potatoes, ham and eggs, and toast with butter and jam. Quite an amazing spread for a working-class person in 1912!

I have a Last Dinner on the Titanic cookbook, actually. The first cookbook I ever owned.

(Shut up, Gabriela. Your nerd is showing.)

Off to spend the day with my loves! Have a great Saturday!
