I've heard mixed things about the origins of my favorite condiment, so I did some research. I discovered via Wikipedia that the first hummus-like recipes are traced to 13th century Egypt, but the true "hummus" we enjoy today was first seen in 18th century Damascus.
Another fun tidbit: US hummus consumption increased 35% from July 2008-April 2010, and it's currently consumed in 17% of US households. The best fact? The world's largest dish of hummus was created in Lebanon, weighed 11.5 tons, and took 300 cooks to prepare.
Um, why wasn't I there??
In any case, I was craving it all morning and knew exactly how to incorporate it into lunch!
A salad beast, of course :) This one contained all the usual fixins- romaine, cucumber, carrot and tomato- along with a mountain of creamy sundried tomato Sabra goodness. My favorite way to eat the stuff!
On the side, I had a whole-wheat pita for dipping and mopping...
Plus a fuji apple, some salted roasted peanuts and the last of my medjool dates, stuffed with almond butter and mini chocolate chips.
Oh, and then I baked! But you'll have to wait until tonight for the recipe :)
