While at the grocery store this afternoon, I picked up a package of pre-made polenta. The wheels in my head started turning, and this is what I ended up with.
Vegan Polenta Lasagna
makes 3-4 servings
- one 16 ounce polenta brick, thinly sliced
- about 1.5 cups organic marinara sauce (I used a sauce with added veggies)
- 1/4 cup nutritional yeast (or shredded cheese, if dairy isn't a concern)
- 1/2 small onion, sliced
- large handful of spinach, chopped
- two tomatoes, sliced
- few leaves of basil
- oregano and black pepper, to taste
Preheat oven to 375*F. Spray a casserole dish with nonstick spray and spread a thin layer of marinara sauce on bottom. Line dish with half of the polenta rounds, then top with more marinara sauce. Layer on spinach and onions, then top again with sauce. Place remaining rounds atop other layers, add more marinara, then finish with tomato slices. Sprinkle on nutritional yeast or cheese, then add basil and spices to taste. Bake for 45 minutes to one hour, or until top is slightly brownes
I made myself a single-serving vegan dish with a toasted sandwich thin, while my parents shared a larger mozzarella-topped dish.
...which my mom forgot to take out of the oven in time.
They still loved it, though!
Minimal prep time, clean ingredients, lots of Italian taste and filling to boot. I'll be making this again!
For dessert, I had a bowl of grapes with a serving of Chocolove dark chocolate.

This evening, I also worked on my inspiration board, as inspired by the Fitnessista.
The idea behind the board is to have a constant visual reminder of your goals and the lifestyle you want.
