Packed to the Brim

The best way to start a semester is with cabinets packed to the brim!


This morning, my dad drove me back up to the city. He'd been up since 4:30 to drive my brother and sister-in-law to the airport, so it was awesome of him to spend yet more time in the car. We spent the whole ride talking and arrived in New York at around 1 pm- just in time for lunch.

Mike joined us atone of my all-time favorite restaurants: Quantum Leap. I ordered the vegetarian stew, a vegan mix of seasonal vegetables and tofu slowly simmered in tomato herb broth.


I got this dish once before, and it didn't disappoint the second time. Flavorful soup with plenty of tofu chunks and loads of veggies. Yum!


The stew came with two slices of whole-grain vegan garlic bread, as well.


My dad ordered a grilled veggie burger, while Mike got multigrain waffles. I love that this place offers such cheap and delicious vegetarian fare.

Now I'm snacking on a whole-wheat tortilla with hummus while relaxing and unpacking. I've already tackled the groceries- onto clothes!
