Twinkle Toes

For lunch today, I knew I wanted to use my immersion blender. With a depleted veggie stash, soup was out of the question, so I opted for something new: blended oatmeal, which I've seen Kath make several times.


I prepared a batch of stovetop oats containing:
 - 1/2 c oats
 - 1 c almond milk
 - sliced banana
 - chopped apple
 - spoonful of TJ's creamy peanut butter
 - spoonful of flax meal
 - cinnamon & almond toppings

The blender gave the mixture an oat bran-like texture, and the addition of apple gave them a faint applesauce flavor. 'Twas delish!

I spent the afternoon with two of my close friends from high school, Maggie and Danyelle. They refused photos, so I pulled one from the archives:

Since they hadn't eaten lunch, we hit up Chili's, a high-school favorite. Though my oats filled me up pretty well, I had my fair share of chips and salsa.

Afterwards, we headed to a nail salon for pedicures. Even though I got a pedi just a few days ago, I couldn't resist another one, especially with the addition of a leg massage and festive sparkly red polish.


On my way home, I grabbed dinner at Wawa, a Philadelphia area favorite. 


Mustard, oil & vinegar, lettuce, tomatoes, red peppers, sweet peppers, hot peppers, pickles, salt, pepper and oregano on a whole-wheat bun. Tastes like home to me.


I also had an apple and some espresso dark chocolate, as well as a few peanut butter fingers and a handful of pistachios.


Gotta run- Mike and I are having a Christmassy date tonight!

The leg massage + the massaging chair are totally worth getting the extra pedicure. Those are my favorite parts of the whole experience! :)

the immersion blender....nice. I do love chunky and texture and thick chewy bites so i prob wouldnt have blended the oats but...for soups. oh it could save me lotsa time!! i have always wanted an immersion blender. but i am buying a dslr first. lol.

It's so great coming home for the holidays and getting to see old friends! Sounds like such a fun day - especially the pedicures!
