Vegan Shepherd's Pie and Italian Pastries


This evening, Mike and I had another one of our home-cooked dinner date nights J

On the menu: Caitlin’s vegan shepherd’s pie, steamed broccoli and sesame bread.


To start, I simmered four chopped carrots and half an onion until they were tender.


Meanwhile, I microwaved three sweet potatoes for four minutes apiece before mashing them, adding a few splashes of almond milk to moisten.


Next, I drained the carrots and onions and added a can of corn and a can of kidney beans along with 1.5 cups of water.


I mixed in 1.5 cups of vegan buckwheat pancake mix, salt and pepper, and chili pepper and spread everything into a glass baking dish.


Finally, I topped the mixture with the mashed sweet potato, salt and pepper and baked it at 350* for 30 minutes.


Yum! The sweet potato definitely made this dish.


I served myself two small squares, along with  several helpings of steamed broccoli.


We also enjoyed a fresh unpictured sesame loaf with dinner.


Post-dinner, my sweet tooth hit full force. I started off with a Halloween lollipop:


As soon as I polished this off, Mike suggested taking a walk to get dessert.

This happened...


A chocolate chip cannoli, and a puff pastry shell filled with cannoli cream and topped with coconut.


I tried to be moderate in my sweets consumption, eating about 2/3 of the puff pastry. Unsurprisingly, it was delectable.

Lobster tails are so good. So flaky and creamy. I saw them made on Cake Boss and they are a pain.

Chocolate Chip Cannolis = love. If you're ever in Boston, definitely try the cannolis from Mike's Pastry.

I Love that recipe. I make it all the time. If you add cheddar cheese on top of the sweet potato its even better- a great sweet/savory combo!

The shepherd's pie looks delicious!! I never would have thought to use pancake mix to make the middle thicker.
Those pastries are beautiful, too!

That shepard pie looks really great! I've had thoughts about making shepard pie like that, but the husband hates sweet potatoes. I figured since I made him eat sweet potatoes yesterday, I should lay off for a while.

This sounds delicious! My mom often made shepherd's pie growing up, but I love the addition of pancake mix. And, of course, sweet potatoes! Have a wonderful Friday.

I've never had shepherd's pie, but with all of that sweet potato on top, I'm not sure why I never have.

Shepherd's pie is definitely one of my favorite comfort foods. I love the twist you gave it with the addition of sweet potato!

seriously italian baked goods are SO hard to be moderate with haha. if you put a rainbow cookie or a black and white buttery cookie in front of me it has no chance what so ever!

i'm loving your thursday night tradition with mikey :)

I used to love my dad's shepherd's pie, but he hasn't made it in years! It was so good, but I think I'd like this version with sweet potatoes even better. :D

That easily looks like the best shepherd's pie I've ever seen. Sweet potatoes > regular potatoes!!

And, homegirl, you are killing me with all of these amazing desserts lately :P
