A Fall-Inspired Dinner

Tonight, I treated my family to a fall-inspired dinner!


On the menu: Emily’s Butternut Squash and Black Bean Chili in Pumpkin Bowls (which I first saw on Oh She Glows) and Allie’s Goat Cheese Stuffed Pears.

The chili was hearty and delicious by itself, full of squash, beans and peppers, but the addition of roasted pumpkin really put this dessert over the edge! I sprinkled the insides with nutmeg and cloves before baking them to really bring out the fall flavors.


I was surprised at how well the dish went over with my family, too- I wasn’t sure whether it was a bit too adventurous for their taste buds, but they raved about it!


We also had some hummus + crackers and leftover tabbouleh with our pumpkins.

The goat cheese stuffed pears made a great sweet and savory end to the meal.


In the goat cheese mix: dates, pecans, cinnamon and honey. Not overwhelmingly sugary, but enough to satisfy a sweet tooth, and packed with whole foods!


I’ve never been a cheese person and therefore rarely eat it, but this might just be my favorite way to have it!


A few unpictured squares of Godiva orange dark chocolate slipped in after dinner as well ;)

With the addition of a grain and a green and maybe some vanilla ice cream to accompany the pears, this combination would make an amazing meal for a dinner party!

Early to bed tonight- it’s back to the city tomorrow!

Have you ever eaten roasted pumpkin? I’d only ever eaten it from a can before tonight.

Are you a cheese-lover? I try to eat as little dairy as possible due to my personal health ideology; however, when I do eat it I prefer creamy desserts to cheese.

i just made a bean and squash stew and the recipe called for toasting of cumin seeds beforehand-- really brought out the flavor! learn something new all the time!!

I only ever eat roast pumpkin; I've never eaten canned pumpkin... blech!

when i was in s africa they roasted a whole pumpkin - it was AMAZING.

We had this chili for dinner in acorn squash and it was sooo good! I was saving the pumpkin for something else but I bet it was amazing!

I haven't had cheese in years but my favorites were creamy goat or aged gouda!

Holy cow, this looks AMAZING. I would probably die if I saw this all on my table, what lucky guests, haha! I love all kinds of cheese, goat is no exception! Enjoy your evening girl.

the pumpkins...saw angela make those and i am beyond impressed that you, a 20 yr old college girl is making food that would rival 5 star restaurants...are you sure you're not destined to become a chef?!?!

and the pears + cheese mix. NICE! I love the mixture of the cheese mix and that sounds soo easy to recreate as a spread...yum!

I've never eaten roasted pumpkin, but I would really like to try it! While I LOVE cheese, I tend to only eat it a few times a week. My choice is usually either goat cheese or feta cheese.

I'm one of those people who do NOT like pumpkin in a can...I just find the taste yucky and wet for some reason. Roasted pumpkin on the other hand...so damn delicious! And I definitely LOVE cheese!

I can't wait to try the vegan chili in a pumpkin bowl recipe, as soon as I get to a kitchen again!

I, like you, eat cheese sparingly, but when I do eat cheese my favorites include feta cheese, goat cheese, and anything aged like a good cheddar.

What a gorgeous dinner! Your family is so lucky! I really want to try roasted pumpkin now. And I'm not a cheese person either but I did try goat cheese on a beet salad a few weeks ago and thought it was pretty tasty!

WHOA! Gourmet meal, much? :)

I'm not a huge fan of goat cheese...it's just a tad too strong for my liking. But a cheese-stuffed pear sounds pretty tough to beat!!

As for cheese, no me gusta. I'll stick to my nutritional yeast, thank you very much. :)

i love love love love love LOVE goat cheese haha i could swim in it with balsamic :) mmm! other then that i'm not really into the cheeses like cheddar or american and what not

Dinner looks great!!!!

I am not much of a cheese person never have, though Michelle loves it, so it was hard for her to realize dairy and her do not get along. Though occasional goat cheese works for us :)
