Yes, I am aware that I am posting during the Super Bowl…despite being born on Super Bowl Sunday 20 years ago, I have never actually watched the game. Very un-American of me, I know, but I’ve never been one for sports!
Last night ended up being just as fun as I’d hoped, though much more low-key than I was expecting. After posting, I headed up to the Bronx, stopping at Crumbs cupcakes along the way to pick up two cupcakes- one for me, and one for Mikey. We’re both obsessed with them but didn’t get a chance to go there since he’e been in town, so I’d promised him a special delivery. Obviously, mine didn’t last past the train ride:
Grasshopper cupcake: “Rich chocolate cake filled with chocolate fudge and topped with mint flavored cream cheese frosting with chocolate cake crumbs, edged in mini chocolate chips with a vanilla buttercream rosette”
In other words: Oh. My. God. I ate all of the frosting and fudge filling, along with about half the cake part, before I started feeling sick. What can I say, I like the frosting better than the cake! Crumbs never disappoints!
Our original plan was to hang out at Mike’s friends’ apartment and then go out, but the college bars had all been raided the night before and no one was feeling a citation. A bunch of people decided to go into the city to see a scary indie film, so rather than have me sobbing and screaming throughout the length of the movie (I’m a huge baby!), Mike, Mikey and I decided to just hang out at the bar in Mikey’s hotel. We ended up staying there until last call at 2am, just ordering crazy mixed drinks, eating beet-potato chips and catching up. I had two ridiculous cocktails and a glass of wine, plus probably an entire basket of chips (we had four over the course of the night!). Overall though, it was worth it…my favorite way to drink is with a few close friends, just hanging out. I much prefer that to frat parties or bars!

This morning I woke up feeling kinda icky, so I kept breakfast pretty plain:
I’m liking the vanilla extract in the cereal addition…it gives it more flavor without adding sweetness! Afterwards, I made a quick trip to the gym for a Winter Shape-Up work out. Since today was a “rest” day, I took it easy and only did 5 minutes of power-walking as a warmup in addition to the strength plan.
Lunch was a variation on Friday’s dinner, since I needed to use up the remaining ingredients:
I added 2 T balsamic and 2 T olive oil to 4 T tomato paste, then added steamed broccoli and served it on top of a bed of lettuce and polenta. And nutritional yeast, of course J Love this stuff! I also had an organic Gala apple on the side.
I read for French classes all afternoon and had a few snacks to keep me going:
Banana, kiwi and mini Larabar; carrots and mustard for dipping
Tonight for dinner I had plans to meet up with Jillian for dinner at Peanut Butter & Co. I’m a huge fan of their nut butters but had never actually eaten at the café, so I was freakishly excited. The menu is absolutely overwhelming for a PB lover, and after much deliberation, I finally chose The Bee’s Knees:
The Bee’s Knees PB, apple butter and wheat germ on vegan black bread with carrots and chips; Jillian’s Rocky Road sammie
SO YUMMY! Ironically, the apple butter was the star of this sando, even though the PB was delicious as well. Jillian and I swapped a quarter of each of our sandwiches, so I got to try hers, as well- Rocky Road, which was Dark Chocolate Dreams, marshmallow fluff and sliced almonds on whole wheat. I think you can just imagine how delicious this was!
So far tonight has been full of the usual Sunday homework catch-up, while munching on a new bar of dark chocolate:
It’s my nightcap J Back to work for me…I’m going home for President’s Day weekend on Thursday, and I’m trying to be as productive as possible this week so I can enjoy home without work!

I totally agree with you about that being the best way to drink - it's just so relaxing to chat and enjoy some cocktails with your closest friends! Plus you don't have to yell over crazy drunk people or avoid inhaling too much second hand smoke.
I'm totally not watching the Superbowl either. I really only like the commercials, and giving up several hours of homework catch-up time just isn't worth watching it live when I can just YouTube the really good ones tomorrow.
highlight of my weekend...hmm, my daughter correctly using the words mommy this is very salty, upon eating nori. She just turned 3 so that's big. both the vocab and the nori :)

Fellow NYU student (and totally inspiring foodie besides): help a lowly freshman to locate mini Larabars! Where's the secret stash in this village? I've deployed numerous field agents and the best they've come up with is the elusive tropical fruit tart flavor (full-size, but it's hard to complain considering how good it is).
My weekend highlight was spending some relaxing time with the hubs! Carrots are one of my fav snacks for class/studying, easily portable and so crunchy!
pb & co makes chips? i haven't even tried their pb yet!! i think you made the right choice on your night plans, sounds like a fun duo!
