Bonjour mes cheries! I hope you’ve enjoyed your “Monday”…only 3 days until the weekend!
I woke up at the buttcrack of dawn (aka 6 am) to get a workout in before classes. I munched an unpictured nanner before heading out, dipped in this new lovely lady:
Whole Foods Creamy Cashew Butter. Deeelish!
As someone who frequently eats spoonfuls of nut butter from the jar while standing in front of the fridge, this stuff was dang good!
At the gym, I did 45 minutes on the elliptical, following a certain hot, healthy, housewife’s advice to sprint out the chorus of every song. Not only did it make the time fly by, since I was constantly paying attention to the songs instead of the time, I was thoroughly cardioed-out when done. Good call, Therese J
Breakfast was my usual: unpictured Kashi GoLean, blubs, and Almond Dream almond milk. I love me some good oatmeal, but I’ve had cold cereal every day since I was in preschool. Old habits die hard.
I was supposed to have two classes today: French Lit and a GenEd science class. French went well, but surprisingly, the science teacher never showed! The 200-person lecture sat in relative silence for half an hour until a student started screaming out slam poetry. (Only at NYU, I’m telling ya!) Mass exodus followed…I’m still waiting on an explanation email from the professor. Bizarre.
Between my class-and-a-half, lunch was consumed:

Healthy Korner Spicy Vegetarian Chicken Salad pita, grape tomatoes, Helen’s Pure Food Hummus, pink lady apple
I was super excited to stop at the Space Market and pick up one of my fave pita pockets. I’ve missed these! I also had an unpictured mini cashew cookie Larabar for dessert J
In lieu of my cancelled class, I stumbled around the Village for awhile and miraculously stumbled upon this little joint:
Peanut Butter & Co. on Sullivan St.
Where I picked up this little guy:
Mighty Maple Peanut Butter
Squeeeee!!
Afternoon snackage included a Clif Pumpkin Pie bar dug from the depths of my bar drawer:

Think I have enough? I need to stop buying every new flavor I see…it’s becoming a problem.
It was delicious- I wish they made the seasonal flavors available year-round! I also snacked on a Lindt dark chocolate truffle picked up at a random deli when I was buying TP, and half a pound of baby carrots (I kid you not!).
Din din was…interesting. I started off with a bowl of steamed broc, topped with Spike seasoning + nutritional yeast. So far, so good. I even went back for a double bowl on that one!
For my main course, I tried something new (please excuse the horrible lighting):
Gardenburger GardenVegan patty in an Ezekiel brown rice tortilla with sliced peppers and Green Mountain Gringo Hot salsa
What went wrong? It wasn’t the combo, per se; rather, the salsa was just too dang hot! This was a new jar and though I love my spicy, it numbed my lips within a few bites. I thought I was a champ, but guess not! I ended up scraping most of the salsa off and eating the remaining tortilla, peppers and burger with a knife and fork. Oh well…you win some, you lose some, right?
Dessert was an unpictured pink lady apple (it’s an addiction) and some Vermont Bread Company Cinnamon Raisin Bread topped with Peanut Butter & Company Mighty Maple. I was so excited to eat it that I forgot to snap a pic L Sorry, charlies!
Rocks. My. Socks. Any day in which I get to try two new varieties of nut butter is a good day for me!
Well girls, I’m off! It’s only the first day of classes, but homework calls…bonne nuit!
What’s your favorite nut butter? Are there any flavors you’ve been waiting to try?
