1. My 20th birthday is in a week! (I'm still five and get super excited).
2. I just signed up for my first half-marathon, The More & Fitness Magazines Women's Half Marathon on April 25, meaning I need to start some training. Wheee!
Anywho, onto some eats. It's been a delicious day! After eating my usual bowl of cereal, I hit up the gym this morning for the same workout as on Monday, (courtesy of Gina) and came home to breakfast for lunch:
Steel-cut oats, 1 c almond milk, large sliced nanner, half a container ofblubs and 2 tbs of cashew butter
It was my first time trying steel-cut oats, and they didn't disappoint! I loved how only 1/4 cup made as many fluffy oats as 1c regular oats. I added the banana when the oats were almost done cooking, so they got all marshmallowy as well. Mmm :)
I enjoyed this bowl of comfort with a pink lady apple, grape tomatoes, and Helen's Pure Food hummus. Delish.
I had two French classes today, both of which seem like they're going to be awesome. Both teachers are really young and energetic, which is always nice! I hate when professors talk down to you.
Between classes, I went to a student lounge to enjoy a snack with the intention of catching up on some blogs/homework. I broke into this little guy:
Chocolate Peanut Butter Luna Protein bar
I definitely prefer this flavor to the chocolate cookie dough...it reminded me of a Butterfinger! Yum :) It's still pretty processed and full of sugar, but like I said in my earlier post, it's still a great alternative to a candy bar.
Much to my chagrin, however, I discovered that for some reason the campus WiFi wasn't working on my computer. I tried the connection at Cosi, just to see if that made a difference, but it didn't work there either! I ended up taking my laptop to the Apple Store this evening, where they made me an appointment for Friday to get things sorted out. It's fine on the ethernet, but I still hope they can fix it!
I was still pretty hungry after my bar for some reason, so I ended up munching a bag of trail mix from a vending machine to console myself (I tend to get overly frazzled about these things).
The highlight of my day was definitely dinner. I met with a friend from childhood who also goes to NYU at Angelica Kitchen. I was stoked all day because I've been wanting to try it forever!
Pickled vegetables as an appetizer
Roasted vegetable salad (eggplant, mushrooms, artichokes, squash and sweet potatoes, arugula, balsamic vinaigrette) with hummus on garlic crostini
It was delicious! My friend is just getting over being sick, so she wasn't hungry for the vegan cornbread she ordered in addition to her soup. I happily took it off her hands :)
Dessert was eaten just a few minutes ago:
Pink lady apple with 2 tbs Mighty Maple PB and a Honey Graham Clif Kidz bar. Such an afterschool snack, I know!
I'm off to do some homework and get to bed early...I've been doing really well on sleeping enough so far, and I'd like to keep it that way!
What is your favorite vegan/vegetarian dish? Would you/have you tried a veg restaurant, or do you prefer a little more meat in your dinner? No judgements at all- I'm curious!

I don´t really have a favourite vegan/vegetarian dish. I like Green Lasagna and Tabule, though ;)
I´ve never tried a veg restaurant! Actually, there is one really near my house I´m DYING to try! Must be awesome.
And I have nothing against meat, but I prefer white meat. Chicken and fish. Tastes better to me :)
Oh, and before I leave, I wanted to ask you something. Since I´ll be at NY from Jan 30th to Feb 4th, what do you think about a "blog meet-up"? Would you like to meet me (and my Mom, haha) for lunch/dinner, sometime?

yay for it eing your birthday this week! that roasted vegetable salad looks so good and i love the honeycrisp with peanut butter in it. i want to try that luna protein bar- i've only had cookie dough and liked it alot!

Happy Upcoming Birthday... my 30th birthday is coming up.. well in a few months and I have list of things I want to get done in my last 6 months of being in my 20's... Enjoy the best years of your life.. once you get a job and enter the real world things will change and time will go by really fast.

As far as the veg/meat question goes. I grew up in the "meat & potatoes" midwest (ohio), so I find myself generally adding meat to meals. Although, I WANT to try more vegetarian meals. I just discovered lentils and love them.
I have this bar:Chocolate Peanut Butter Luna Protein bar. But I havent tried it yet.
however, I have heard the cookie dough one is better. But I cannot find it here, only the choc pb.
